Before you start firing up the charcoal, make sure to season your smoker. This involves coating the inside with cooking oil and letting it heat up for a few hours. This helps create a non-stick surface and adds flavor to your meat. Trust us, it’s worth the extra step.

When it comes to charcoal, quality matters. Opt for natural charcoal over briquettes, as it burns cleaner and gives your food a better flavor. And don’t forget to soak your wood chips in water before adding them to the coals. This will create that signature smoky taste we all know and love.
